Hello everybody, today marked the first official day in Cyprus! What better way to kick off the time than to learn about cuisine? The instructors at the University of Nicosia presented us with the different foods native to Cyprus. One of the things that stuck out to me was the more prevalent types of seasonings in Cyprus. Seasonings like salt, pepper, coriander, and cumin (one of my favorites) were repeated within many recipes and used in the cooking demonstration. These seasonings are native to Cyprus, which makes them more accessible and, thus, commonly used. During the instructors’ demonstration, these seasonings, along with a generous amount of olive oil, were used to season the side salad and the main dishes. While the list of seasonings I mentioned was very small, the impact they had on the flavor and savoryness of the food was very large. The food was great, and I am excited for what the rest of this trip has in store!
