Today was a more relxaed day in comparisoin to some of our other days. We got to kick back and eat chocolate and have a farm to table lunch prepared for us! We started our day with a tasting at Sibu, a Costa Rican chocolate company. This was different from all our other tours. We quite literally sat there and ate premium, delicious chocolates for two hours while Mr. Fernandez told us about Sibu’s history and the history of chocolate.
We also learned that white chocolate is no chocolate at all! White chocolate does not contain any cacao, meaning it is actually not chocolate. Additionally, Mr. Fernandez believes that white chocolate is not from Nestle, but Satan!! (He was SO funny, and made many more delightful jokes!)
For lunch we went to a resturant called “Riverside Farm” and toured their garden in the back where they have some fresh produce growing. The rest of their food they get local. It was truly amazing to hear all this and actually see their sustainability strategies. On top of this, the food was amazing!




One relationship I found between coffee and chocolate in Costa Rica is that both have a focus on quality over quantity. Additionally, some risks in the chocolate suppy chain might be climate change, labor issues, and market competition. Also, companies like Britt, Sibo, and Riverside all have one thing in common. They all work to be more sustainable and better their communities around them. How amazing is that!
