After almost 2 days of traveling here, we have finally made it to Cyprus. Although we are all working through a lack of sleep, we’ve been ready and excited to get started with a ton of fun activities. This morning we took a bus to the University of Nicosia (UNIC) and took a quick look around campus before going inside for an introduction session. After briefly reviewing the history of Cyprus, safety guidelines, and the large presence of cats on the island, we headed to a different building for a cooking demo. The chefs there introduced us to a variety of foods that are popular, and I really was interested by a lot of the stuff that is widely eaten around here (especially Octopus). After that, with the help of some volunteers, we tried out some of the food and it was delicious. My personal favorite was the salad, which I may or may not have had several plates of. Excited to see the rest of what we do and explore today!
