Today, we arrived in Cyprus bright and early at 2 AM. What a first day we have had too! The hotel is very high tech as everything can be adjusted via your phone. The rooms are beautiful. The shower felt amazing after the long travel days we had, and I am currently enjoying the beautiful weather on our lovely balcony. I have really enjoyed getting oriented to the culture and the university that is making this experience possible. The University of Nicosia provided us with an excellent culinary demonstratration of classic Cypriot dishes including those featuring halloumi, olives, pita, and apricots. The food has been my favorite part so far, and I am so grateful we have already gotten to try so much. Some friends even got to help prepare the dishes which is super cool. I could not have asked for a better first afternoon in Nicosia. After I post this blog, we will head on a walking tour of the city and a welcome dinner. More great experiences to come…stay tuned!
