Getting to Cyprus was definitely not the easiest thing in the world. With long flights and an even longer layover in Heathrow, though, even with only half a day in Cyprus, I can tell it was worth it. Even on the bus ride to our awesome hotel at three in the morning, it was clear that this island was going to bring good times, with the cool people I had just met. After getting some much-needed rest, the only thing on my mind was rushing downstairs to ensure I got some complimentary breakfast. The poached eggs and avocado toast I had were delicious and woke me right up. We then hopped on the bus for our first day at the University of Nicosia. We had orientation, and a food presentation, where we got to try out some Cypriot dishes. As a sweets guy, the dessert was my favorite of all the different foods we tried. Now I am just waiting with anticipation for all the great thinks planned on this trip on this beautiful island.
