After two days of long travel, we have finally arrived in Cyprus! We kicked off our first morning in Nicosia, and had the amazing opportunity to experience, and taste, some of the amazing food of Cyprus, provided by a few of the culinary chefs at the University of Nicosia. It was the perfect way to get a first taste (literally) of Cyprus! We were able to try samples of what some potential appetizers, main courses and desserts would typically look like. These included foods like creamy tzatziki, falafel, olives, fresh pita, zucchini, and so many other delicious food items. The chefs explained the ingredients and how each dish connects to the culture, making this experience even more meaningful. They even allowed for it to be an interactive experience where we were able to help make the dishes! I am so excited for what’s ahead, especially considering how amazing our first morning was. I cannot thank the University of Nicosia enough for having us!
