From Data Centers to Digestion: Day 1 in Greece

With data centers turned into innovative medical and research facilities, to vacant space being converted to one of the largest urban renovations, we have seen it all! Though this was our first day after a long winded flight, all came to light as our Plus 3 Greece trip was able to speak with the Chief Executive Officer of UNIC Athens, Antonis Polemitis. Before we were given an encapsulating tour of the facility, he bestowed some knowledge on us that I stuck with me. He presented to us the idea that the food we eat is extremely underexplored leading us to ingest unknown chemicals and oftentimes metals. Additionally, Polemitis spoke about how even though chocolate that is labeled as “Organic” or “SmartFood” contained the largest amount of  lead and cadmium going to show that there is not always truth in the labels that we see. This interests me about the research that is being done to further explore how different products can affect our digestive systems. With this new understanding, I foresee myself looking more closely into the ingredients listed on food to understand what exactly the food is made of. One last interesting factor I resonated with was the approach that was taken to identify what is known and unknown about the food we eat. Which was done using both gas and liquid chromatography, both being concepts that I have learned this past year in Chemistry 2! I always love seeing intersections of hands-on-learning and ideas/applications that are present in the real-world and in the classroom settings.
