Today was our first time exploring Athens! I had an absolutely fantastic time touring both the UNIC Athens campus and Ellinikon Experience Park. At the UNIC Campus, the CEO of the university, Antonis Polemitis, spoke about the research the university will do in Deep Genomics, which is the study of the composition of substances. This includes the analysis of micro chemicals and other miniscule compounds that are too small to see with the naked human eye. The CEO compared our eating habits to those of pre-Victorian humans because we essentially consume food and drinks simply because they look good, even though we know nothing about the micro substances within the food; however, instead of developing cholera, we develop cancers and other diseases in the modern day. This topic will stick with me throughout the rest of my life, as I will never look at food the same way. I found this topic extremely interesting, and I am excited to see the progress we can make in this field as AI develops and the technology that can perform this analysis becomes cheaper.
