My favorite experience of the trip was eating all of the delicious food, including the cooking class. I thoroughly appreciate the meticulous use of local Greek/Cypriot spices, cheeses, meats, and produce. Their intentional use of each ingredient is admirable and shows just how passionate they are about the way cooking has shaped their culture. As someone who works at a farm market and grew up in a household where my mom would make authentic Indian food, I really appreciated the food quality of the dishes along with the passion it takes to make them. Through our cooking class, we learnt from an energetic and engaging teacher that instructed us through making savory chicken gyros. I will be thinking about that meal for months, and remember it by cooking it for friends and family back home. Oftentimes, food you get from restaurants in the U.S. taste processed and greasy, but the food I have found here is much cleaner due to higher food restrictions. This opportunity to eat higher quality food is giving me a taste of the quality of home cooked food in a Greek flavor.
